I think it's important that to stay motivated, we give ourselves little treats along the way, or plan something to look forward to.
I baked this #glutenfree blue swirl 🍭cheesecake not only for myself, but also for my partner who won't eat cake unless it's cheesecake AND my mum and sister who are both Celiacs. It was a big challenge as I know how easy it can be for a gluten free dessert to go wrong. .
One of the common dilemmas that I have discovered is that gluten free food can be really expensive and usually there isn't much variety available in supermarkets. Just a simple small packet of gluten free biscuits can be $4 or more, when you can get a bigger packet of wheat biscuits for $1. Being unsatisfied with what the supermarket had in stock, I decided to make my own gluten free biscuit base for my cheesecake. 🍰
